 Throttle Stutter

When i go uphill or even on flat roads and give my xt a lot of throttle it will sputter until i let go of the throttle and try again. I recently, a few months ago, rebuilt the carb with all new jets and gaskets. replaced air filter. fresh spark plug and spark plug wire.
Clean the carb again?
Check the petcock?
Any thoughts or ideas would be helpful.
