I don't have one but have researched them a bit. Yes, it uses the stock petcock. Not sure how big the reserve is, but I have heard/read that some of the fuel can get "trapped" in the right side of the tank. Sort of a forced reserve. To get access to the remaining fuel, the bike needs to be stopped and leaned way to the left. This bugs some people enough that they modify the tank with a tube which connects the two sides of the tank, near the bottom. I thought it used the stock petcock, but wasn't sure. The fuel cross-over issues are common with this "saddlebags" style tank. A friend had a DRZ with a monster 7+ gallon tank for a while. We called him the Exxon Valdez as he acted as a supertanker should anyone else in the group need gas. It took him a while to figure out that he didn't have to fill it up all the time and carry all that extra weight. The bike was pretty unwieldy off road with a full tank.

7+ gal. ! Yep, that's some serious weight on a bike like a DRZ. I am sure it raises the center of gravity considerably. Oddly (or perhaps no so oddly) that size of tank is more appropriate on a heavier bike, IMHO.
Regarding the 4.1 Clarke on the XT; I've hmmmed and hawed about it for a couple of years. The price kept me away at first, and then I added a huge top-box to my rear rack which can accommodate a 1 gallon plastic gas can (along with a bunch of other stuff), which serves the purpose very well. I rarely need to use it, but I like knowing that it is there.
Long term, it looks like I am going to be moving on to a DR650 next spring, so I no longer ponder the Clarke tank for the XT.
